Most natural chocolate flavors are broken down into 6 different flavors: unsweetened, bittersweet, semisweet, dark, milk, and white. The flavors vary in cacao content and cocoa butter use (white chocolate being chocolate made from cocoa butter rather than cacao). Most chocolate is made from 3 different varieties of cacao: Forastero (most popular, from South America), Criollo or Trinitario. These all range in flavor as well. These are the basic flavors of chocolate, but they all can range in taste depending on what else is used to season the sweet while cooking.
