I think it’s difficult to calculate exactly how many Americans are vegetarians, especially when many people choose to change their dietary preferences, sometimes day-to-day. It’s also noteworthy that people have changing definitions for what a vegetarian is, or rather what one eats. I called myself a vegetarian from age 11 to 21 but somewhere along the line I began to eat fish. When? I’m not sure, exactly.
