It depends on what type of food it is, how it’s stored and if there’s any defect in the can or pathogen in the food. High acid foods like tomatoes and fruit can keep for up to 18 months. Low acid foods like meat and vegitables, last 2-5 years. If you’re canning it yourself, I’d shy away from eating food that’s past that amount of time, especially since you probably aren’t injecting the food with preservatives either.
