There is no exact number saying how long a board should be used for. As long as you regularly keep it clean, a good quality wood or bamboo cutting board can be used for years. It is only if you allow juices to seep into the wood that bacteria can linger in the wood – although it will not be able to reproduce inside the wood. Also, if your board develops cracks and gauges, it might be a good time to replace it, because germs and bacteria can breed there.
As long as it’s not too absorbent, you can keep your cutting board for a long, long time. If it’s starting to get too cut up, then it might be time to replace it. However, this would probably take a long time and a lot of usage to get to this point. It’s one of those kitchen supplies that only has to be replaced once in a very long while.
