How long can you keep raw chicken out of the refrigerator?

You really shouldn’t leave it out at all. At just 50 degrees F bacteria can start to grow on raw chicken. If you just killed the chicken (and it needs to cool down) or you just took it out of the freezer or something (and it needs to thaw) you could leave it out for about an hour or two at most. More than that and you risk getting salmonella or other disease from your chicken.
