Saturated fats are pretty much the only fats you should avoid because they lead to a build up in cholesterol which can lead to heart disease and stroke. These include trans fats. Poly- and mono-unsaturated fats are essential. They transport fat soluble vitamins throughout the body, protect internal organs, and provide a health concentrated source of energy. Essential fatty acids which also fall under this category benefit your heart, metabolism, and immune system. Some essential fatty acids are used for structural, hormonal, and electrical functions. These are things that are necessary in the body. Most of the good fats come from vegetables in fish.
