How does sugar help preserve food?

    Sugar absorbs the internal fluids of microorganisms that cause food to be spoiled.  By absorbing these liquids, the microorganisms shrivel and die, thus stopping decay.  Salt serves the same function.  By placing a layer of sugar or salt over food, it protects it from bacteria and preserves food longer.
