How do we take the fat out of milk?

    Left standing, unprocessed milk tends to separate into a high-fat layer (cream) at the top, with the rest of the milk containing less fat. This process can be accelerated with a centrifuge, and skimming off various amounts of the top layer results in milk with various fat contents (once it’s been skimmed, it’s often homogenized to give it a uniform consistency and fat content).
