I don’t think it is that you are saving energy. If you wash and dry your clothes or run your dishwasher at 2pm or 2am they will still use the same amount of energy. However, when you wait until businesses have closed their doors to do these things, you can reduce the demand for electricity at one time, reduce the chance of a blackout (particularly in southern California on hot days) and possibly even save yourself some money. In general, electricity rates go down during off-peak hours, although not every utility company directly reflects this on your bill.
