In processed foods, preservatives do the job. In produce however, there is a process known as food irradiation in which food is exposed to radiation in order to kill bacteria and viruses in the food that would otherwise cause it to rot.
A lot of times, there’s a lot of preservatives in food. This isn’t necessarily good for your health, but it keeps the food fresher for longer. Also, refrigeration and freezing preserves food for a while.
