It’s actually the Earth rotating, not the stars, that causes the night sky to shift around the point of the North Star. Stars do also revolve around their galaxies. Our sun would take 230 million years to revolve around the Milky Way. They move due to their mass and the pull of gravity.
Our Galaxy is a spiraling galaxy, so it rotates around a center. Just like Earth orbits the Sun, stars orbit around the center of the galaxy, though in a somewhat random motion. It’s estimated that it takes our sun about 230 million years to make one revolution around the center of the galaxy.
