How do scientists know if an animal is actually speaking/signing or just mimicking humans?

The best way to tell is if an animal seems to be able to associate a word with its meaning, without verbal prompt. If an animal can identify an object shown to it with a word without anyone prompting it to say that word (provided the animal has already been taught the word at a previous time) then it is using the word to convey a meaning, not simply mimicking humans around it.
