For remote places, solar panels store energy in deep cell batteries at night. But in places that are connected to the power grid, there are grid tie solar power systems. This means that what ever surplus energy during the day that is not used directly is put into the power grid. This creates a credit with the power company. At night, the credit is used to purchase power in use is from other sources on the gird itself(most likely fossil fuels).
