Cover crops (crops planted as a monoculture in between the crops to be harvested) are used to 1) control weeds (the cover crop chokes out the weeds), 2) increase the amount of water available to crops (by preventing soil erosion), 3) reduce pests (if the cover crop is noxious to pests), and 4) improve soil fertility (by adding organic material and phosphorous to the sil).
