How do consumers decide what types of food is grown?

What kinds of food farmers grow depends in large part on the market demand for a particular food product.  For example as more people go out of their way to purchase organically grown food, the market for organic food increases and more farmers will have an incentive to plant organic crops.  By “voting with your dollars,” you can show food growers that there is demand for sustainable, organic produce.  Of course, this isn’t the only thing that has to happen to make our agricultural system more sustainable; laws and regulations encouraging organic agriculture are also needed.  But increased consumer demand for environmentally friendly produce will be an important part of the shift to a more earth-food system.
