How did palm oil become so important to us that we are willing to cut down rain forest?

It has become so important because we have come up with so many ways in which to use it. Despite some nutritional benefit, the real attraction is that palm oil resists oxidation and rancidity, which means products made using palm oil have extended shelf lives. This with its neutral taste have made it an ideal candidate for a great many products, as extending shelf/product life is a serious issue.
