Coal and generally speaking every fossil fuel generates power the same way, they heat up water which turns into steam, which turns a turbine that generates electricity. The theory behind it would be the same as putting a turbine in your chimney, as hot air rises it would turn it. Steam is used because it has more mass and can turn bigger turbines. Fossil fuels are used because they provide heat, that is the source of every power generated today.
