There are several ways to delay microbial decomposition and preserve foods for longer periods of time. These methods include storage in high salt or sugar concentrations or in weak acids (also called pickling), drying (also called dessication), cooling (also called refrigeration), and killing the microorganisms by way of heat or radiation.
