Is your oak tree losing its leaves at an unusual rate or is it during the regular seasons? If it is appearing to fall off during spring it may be a couple things. It could either be a pathogen that is causing the leaves to fall prematurely, or insects infestations (oak moth). It could also be perhaps the roots are rotting. You want to really diagnose what is wrong because if it is serious, your oak tree may die. Here is a pdf. from UCDavis that will give you much more detail than this answer.
