Spices have been used for thousands of years and have been a consistent form of trade for many nations. Though many different seeds, fruits, nuts, roots, barks, leaves, etc. have been used all over the globe to enhance foods or be used in sacred rituals or medicine, there is one unifying trait that unites them all. In order to be considered a spice, it must be dried and cured. This is in contrast to herbs, which are plants that are used while still green. Spices can be dried in a number of different ways based on the plant in question and the region you are in, however many include drying huts, often times with fire or smoke as well.
