You should do your major pruning when the tree is dormant, fall or early-spring, and also year round to maintain shape, size, etc…
You should never trim more than 15% of the healthy upper branches, this could kill the tree. Remove any inwards growing, or crossing branches. Maintain a natural shape to the tree. There are loads of tips on the link attached below.
