Evaporated milk is as healthy (or unhealthy, depending on your viewpoint) for you as regular milk. Evaporated milk is just regular milk that has had up to 60% of its water removed through a process involving vacuum evaporation. The product is then cooled, packaged and sterilized – there are no additives (aside from vitamin D). Upon adding the directed amount of water to the evaporated milk powder, one again is presented with an approximation of milk.
Condensed milk is a different product, and is definitely not as healthy. It is condensed and sweetened with around 45% sugar. But is is delicious.
