If you have a gram of water at 0 degrees Celsius, it will take 80 calories of energy to turn it into a solid. If you have a gram of water at 100 degrees Celsius, it will take 540 calories to turn it into a gas. This is called latent heat-it’s the additional energy needed to change the state of water. Water won’t change its state until all the grams change their states. So, it takes about 6.75 times more energy to boil a gallon of water than to freeze it.
