Imitation crab meat does have gluten in it.
But is it possible that the grade used by sushi restaurants is better and doesn’t use wheat?
I am not sure…if gluten irritates you really badly then probably stay on the safe side and stick with real crab meat. According to the gluten-free website I posted a link to all imitation crab meat does have it, so there must be something in the production process that requires gluten. Gluten is a binder, so there must be something about the fake meat that needs help sticking it together.
