Many people prefer the red king crab meat. I personally have had both and can not tell much of a difference. When cooked well, both have a cerain sweetness and a nice texture to them. Blue crab doesn’t seem to be as popular in restaurnats but also turns red when cooked and is sometimes called red crab because of this.
The red king crab is more widely available in stores and resturants. Blue crab flavor varies with the locality where it is caught due to food sources and water conditions. Fresh caught, and promptly cooked, blue crab has a better flavor than king crab which has been frozen or refrigerated for a long period.
