Do we eat more corn than any other country?

Yes! Although it is difficult to find statistics that differentiate between corn consumption and specifically how much we eat, it seems that the US consumes more corn by far than any other country. By the bushel we consume 11,020 million bushels with China coming in second at around 6,259 million bushels. Converted to weight that number is equal to about 207,020 thousand metric tons!

Keep in mind that besides using corn for good old high fructose corn syrup and other food ingredients, we also consume corn by using it to create ethanol, and to put into products such as adhesives, cosmetics, and paint.
