Most vegans take supplements that add essential nutrients such as protien to supplement their diets. Otherwise, many vegan diets would not be healthy.
It’s possible but it is very difficult. Especially when it comes to certain essential fatty acids. Flax seed and nutritional yeast are excellent ingredients for getting some of the more hard to get nutrients. Throughout college I lived with vegans (though I was never one myself) and few were able to do it successfully. It takes a great deal of consciousness about what you are taking into your body.
