Sweet potatoes are actually packed with a lot more nutrients than potatoes. They have many of the same nutrients (Vitamin C, maganese, fiber), but contain much more of all of these than potatoes do. They also contain nutrients that potatoes do not, such as Vitamin A, Copper, and Potassium.
Another thing to keep in mind when preparing sweet potatoes is that more nutrients are retained when you steam or boil them instead of roasting. Also, it’s important to include some fat in your meal along with sweet potatoes in order to maximize the uptake of beta-carotene.
