Do humans exploit all the resources they use?

No. Traditionally, many native populations, like Native Americans, had a health respect for nature, meaning that they did not exploit their resources, but instead used only what they needed and lived in such a way that would encourage a healthy relationship between nature and humanity. Today, the trend has been to go back to this relationship, in which humans use only what they need and try to take less advantage of nature.
