Do plants hibernate ever?

Yes, it is common for some species of plants to hibernate during winter.  When trees shed their leaves in autumn, they are preparing for hibernation.  Also, bulbs and parts of the plant that can live dormantly underground are hibernating as well.  The plants seize to inhale CO2 and nitrogen, and absorption of nitrates and minerals from the soil stops as well while they sleep for a while until springtime.
