Yes, crock-pots save energy since they use low heat (over a longer amount of time.)
I found it surprising that though a crock pot can be on for hours, it is considered energy efficient. A stove can use 3000 kilowatts, while a crock pot uses 220. I would look into the time differences however to make sure that in the long run you are actually saving energy.
