First it can be recycled in the kitchen. Oil used for deep frying can be strained and used again. Restaurants that produce large volumes of cooking oil collect and sell it to be recycled or used as fuel. You can ask local restaurants if they will let you add your oil to their drums.
Used frying oil is the basis for biodiesel, to the point where it is sometimes stolen!
