My guess would be that chunky peanut butter would be better from an energy-usage perspective—because you have to grind up all the peanuts in creamy peanut butter, it takes longer to produce enough to fill a jar, and so the grinding machine must run for longer. With chunky peanut butter, only enough butter must be made to fill the jar minus the volume of the peanut chunks, and then the partially-ground up chunks are added. So in terms of energy spent, chunky is probably better for the environment.
