Coconut provides some important vitamins and nutrients, such as coconut has B vitamins, vitamin C, plus iron and zinc. But living just off of coconuts (or any single food, really) would lead to some major nutritional deficiencies. For one, it’s very low in protein. It’s also high in saturated fat, which is unhealthy in large quantities and can clog arteries, so not a good food to eat tons of on a regular basis.
