Could government provide subsidies to organic farmers so that their products aren’t so much more expensive than non-organic?

Yes. The government provides millions of dollars of subsidies to farmers every year. Many of these subsidies go to help defer the cost of water in areas that are very dry or to pay farmers not to grow crops in order to control the low of food and prices on the open market. The government could focus on providing subsidies to farmers who concentrate on stewardship, growing organically, and sustainably, but the reality is that there are huge farming lobbies that are very powerful and would not allow any money to flow away from the huge farming conglomerates that currently dominate the farm industry.
