Regular soybean oil that has not been partially hydrogenated is extremely healthy and is healthier than coconut oil. Coconut oil is high in saturated fats, however in moderation it is pretty healthy despite reports of it being unhealthy. Any healthy oil can be made unhealthy by making it partially hydrogenated, and thus transforming it into a trans fat.
Most of the bad reputation coconut oil has comes from studies done with hydrogenated coconut oil–essentially a trans fat. Like any trans fat, it produced horrendous cardiovascular results. Recent studies with unrefined coconut oil have shown it to be comparable to olive or grapeseed oil in terms of its effects on triglycerides. LDL, and HDL cholesterol.
