As long as you are not watching your cholesterol and salt intake, caviar has many healthy properties.  Caviar is a rich source of vitamins A and D, as well as omega-3 fatty acids which some researchers say can aid in deterring depression.  It also contains acetylcholine (a neurotransmitter believed to play a key role in memory retention) and Arginine (a vascular dilator in caviar which helps increase blood flow).  Due to the Arginine found it caviar, some consider it to be an aphrodisiac as well!
