It is hard to determine whether carne asada or chorizo is the “better” meat, it completely depends on your own personal criteria. Carne asada is a roasted meat dish made mainly of thin cuts of meat, like flank steak and skirt steak. Traditional Spanish chorizo is a pork sausage with Spanish spices like Spanish paprika. However, here in the US, we are more familiar with the Mexican chorizo, which is quite different in flavor and texture than Spanish chorizo. In effect, the two meats are not comparable. One is comprised of beef, the other of pork, and one is a style of dish while the other is a type of sausage.
