Yes, bamboo is edible. Bamboo shoots are very popular to eat, my mom used to put a can of them in the chop suey that she made. There are also recipes that call for bamboo sprouts. Bamboo is considered a vegetable and can be planted as a viable crop to produce fresh shoots or sprouts. Yes. I am chinese and the chinese generally eat baby bamboo shoots because they are easier to chew and digest. We mostly eat it pickled or braised with mushrooms and veggies.
