Yes, over watering can kill plants by making giving them root rot. Different plants require different amounts of water.
To add on, excess water floating above soil can rot the roots and prohibit the plant’s access to oxygen, making the plant oxygen deficient. As a result, the plant literally drowns in water and dies from it. Too much of anything is bad and unhealthy for any living organism and causes a stressful imbalance for the species.
