Yes, organic milk that you find on the shelves is actually ultra-pasteurized, and this is why its expiration date is so much longer than regular milk. Organic milk doesn’t imply that it is completely from start to finish, it means that no hormones and was fed all natural food. All that pasteurization does is heat the milk to high temperatures for a short period of time to ensure that the bacteria is killed. If you want milk that isn’t pasteurized, you basically have to get it from a local dairy farm.
