Canning is process which preserves goods by treating them with heat to kill bacteria and then sealing them without air to prevent the growth of harmful microbes. Now, it’s true that the use of metals in the canning process has an environmental impact (mining, etc), so it’s not completely harmless, but the same can be said for the process of farming organic, which still alters the landscape and the local ecosystem but does so in a way that’s less harmful than conventional farming.
