Since food-borne illnesses are increasing due to an increase in the consumption of fresh foods in the U.S., is it actually better if we eat processed foods?

    I would say no. The nutrient content is much higher in fresh food and processed foods contain a cocktail of chemicals and preservatives that are not great for human health. The problem with food-borne illnesses are the improper systems for production and food processing. For example, contaminating produce with dirty water or manure. Dangerous bacteria can be killed if produce is properly cleaned before eating.
