Freshly milled flour has a yellowish tint. Flour that has been bleached has been treated chemically to whiten the appearance of the flour. Some flour bleaching agents include: calcium peroxide, nitrogen dioxide, and chlorine. Another bleaching agent, chlorine dioxide, is believed to create diabetes-causing contaminant alloxan after it reacts with the proteins in flour.
