One problem with eating deer is that in many areas deer are suffering from chronic wasting disease, and scientists are not sure if the disease can affect humans who eat meat from affected animals. In many places this has resulting in people not trusting venison or being advised to avoid it by local health authorities.
Venison found on restaurant menus typically is from deer farms and not from wild deer. In North America, venison must first inspected by USDA inspector so it is unlikely wild deer will be able to be used in chain restaurants.
