Cereal grasses are edible; wheat, barley, rye, oat, etc.
Grass is composed of cellulose which we cannot digest. If you harvest the grass while it is still young, cellulose has not yet formed and thus you are able to get the nutrients. By chewing, we are able to get chlorophyll, which is healthy for your digestion. The grasses contain many vitamins and minerals although our ability to absorb all the nutrients is still highly debated.
