Not eating meat at all would be the best for the environment. Eating vegetables and grains saves resources verses feeding those veggies and grains to animals and then eating the animals. This is a wasteful process ecologically, aside from any beliefs you may have about animal rights. If you still must eat meat, you are right that the beef industry is the most energy intensive and can lead to erosion and pollution of ground water. Try poultry or fish, although these industries have their environmental problems too.
Animal consumption for food is just a environmental problem. Factory farming is one of the largest polluters in the world. For example one hog farm in Utah record producing more water pollution annually then the city of Los Angeles.
