There are now many restaurants that are growing their own herbs, vegetables and even fruits for use in their kitchens. Additionally most of these restaurants are composting their kitchen scraps for re-use in their gardens. It would be very difficult for a restaurant to grow as much as they would need to for use every day – they would have to be working a large farm as well as the restaurant, so most of them supplement with foods from local farmers. These restuarants also purchase meat and dairy products from local areas.
