From my research, I have not gathered any information that would lead me to believe that humans have consumed komodo dragon meat.
I’ve also had a very difficult time finding cases where humans have eaten komodo dragons. I do know that komodo dragons and humans don’t get along very well, and they have no problem killing and eating us, but as far as I’ve looked I haven’t found anything about using komodos for food. Apparently there’s a certain type of bacteria in their saliva that is incredibly poisonous and one bite will lead to a slow and very painful death. This may be a reason that humans tend to stay away from eating komodo dragons.
