Israel currently has the largest desalination plant in the world. The plant was designed to produce 388,000m³ of drinking water per day, but has been extended to 462,000m³ per day. The process of desalination is very expensive so only a small fraction of total human use is satisfied by desalination. It has been deemed to only be economically practical for high-valued uses (such as household and industrial uses) in arid areas. Currently, the most extensive use is in the Persian Gulf.
There are plans currently in the works for Dubai to utilize vertical farming, specifically for this purpose and to further extend the reach and availability of fresh water from sea water.
Oil is more available than water in Dubai and other arid climates, so the process of desalination is extremely important for these areas to provide most of their usable water.
